You’ll Need:

2 mugs (pressed) Pork Carnitas (Mexican Pulled Pork) or other destroyed meat (see notes) 

1 tbsp olive oil 

1 container tinned dark beans or red kidney beans , depleted 

1 can (15oz/400g) corn pieces , depleted 

2 containers destroyed cheddar (any great liquefying cheddar) 

8 tortillas 

3 mugs (750ml/25oz) Enchilada Sauce (hand crafted or locally acquired) 

How to Make:


  1. Preheat stove to 350F/180C. 
  2. Warmth 1 tbsp olive oil in a container over high warmth. Include the pork carnitas and cook until the base is pleasantly seared - around 1/2 minutes. Try not to turn, simply make the base fresh (to keep the pulled pork as sodden as could reasonably be expected), at that point evacuate the maneuvered pork into a bowl. It doesn't make a difference if the best isn't warmed through, it will warm in the stove. 
  3. Include the corn, dark beans, 1/2 container enchilada sauce and 1/2 glass cheddar into the bowl and blend to join. 
  4. Spread 1/2 measure of Enchilada Sauce on the base of the preparing dish. 
  5. Spot 1/2 stuffed measure of filling (from stage 3) into a tortilla and move up and place in the heating dish. 
  6. Pour over the rest of the Enchilada Sauce, and heat for 10 minutes. 
  7. Expel from stove and dissipate the cheddar on, at that point prepare for a further 10 to 15 minutes until the cheddar is percolating and brilliant. 
  8. Let represent 5 minutes before serving.
