You'll Need:

  1. 1 glass universally handy flour 
  2. 3/4 glass bacon drippings or margarine - or a blend of both 
  3. 3 tbsp + 1 tsp oil - partitioned 
  4. 2 tsp sweet paprika 
  5. 2 tbsp Cajun flavoring - partitioned 
  6. 2 pounds chicken bosom - cleaved 
  7. salt and pepper - to season 
  8. 1 pound smoked Andouille wiener - cut 
  9. 5 stalks celery - finely cleaved 
  10. 2 substantial onions - slashed 
  11. 2 green ringer peppers - seeded and finely slashed 
  12. 5 cloves garlic - minced 
  13. 3 quarts (12 mugs) low-sodium chicken juices 
  14. 3 solid shapes hamburger bouillion - (discretionary) 
  15. 1 tbsp white sugar 
  16. 1 tsp salt - in addition to additional to taste 
  17. 3 tbsp hot pepper sauce - (I utilized Tabasco sauce) 
  18. 4 straight leaves 
  19. 1/2 tsp dried thyme 
  20. 1 (14.5 ounce) can diced tomatoes 
  21. 1 glass tomato sauce 
  22. 2 tbsp margarine 
  23. 1 pound okra - cleaved 
  24. 2 tbsp refined white vinegar 
  25. 2 tbsp Worcestershire sauce 
  26. 1 pound irregularity crabmeat 
  27. 2 pounds kind sized ocean scallops 
  28. 2 pounds crude, uncooked, shrimp - stripped and deveined 
  29. 4 tsp gumbo filé powder 
  30. Crisp slashed cilantro 

How to Make:

  1. Make the roux. Include the bacon drippings (or a blend of bacon drippings in addition to margarine or simply spread) to an expansive, substantial bottomed pot set over medium-low warmth. Include the flour, whisking persistently to make a smooth blend. Keep on cooking, mixing ceaselessly, for 1-2 hours. The shading will abandon a smooth grayish to a light caramel, to a darker mahogany darker shading (see notes).
