You’ll Need:

60 g/2 oz/4 tbsp unsalted spread 

1 container finely cleaved leeks or scallions/shallots (white part as it were) 

1/3 container (40 g/1.5 oz) plain universally handy flour (unsifted) 

1 container milk 

1 container ground great liquefying cheddar (see notes) 

3 eggs , isolated 

Squeeze of salt and pepper 

FOR Warming/SECOND Heat 

1/4 glasses cream (unwhipped) 

4 tbsp ground cheddar 

Squeeze of salt and pepper 

How to Make:


  1. Preheat broiler to 180C/350F. Oil four ramekins or 6 little ramekins great (see notes for size). 
  2. Convey pot to overflow with a lot of water. 
  3. Soften a large portion of the spread (for example 2 tbsp) in a medium pan over medium warmth, include the leek and cook for two or three minutes until mollified, at that point expel from dish into a bowl. 
  4. In a similar dish, dissolve the rest of the margarine, include the flour and mix for two or three minutes. At that point whisking always, include 1/4 of the milk, and when it has consolidated (it will be a thick glue consistency) include the rest of the milk, whisking continually over the medium warmth. 
  5. Proceed to whisk and in a moment or two, it will begin to thicken. When it turns into the consistency of a thick pouring cream, expel from warmth, include the cheddar and leeks and blend to join. The cheddar does not have to soften. Put aside for 5 minutes to cool marginally, at that point include the egg yolks, salt and pepper and blend to join. 
  6. In the interim, beat the egg whites until firm at that point crease a spoonful of the whites into the cheddar blend to help it. At that point empty the cheddar blend into the bowl with the egg whites and tenderly crease it to join.
